150g caster sugar
Zest 1 large orange
50g dried apricots
150g flaked almonds
150g dried cranberries
250g plain flour
1 tsp baking powder
Preheat the oven to 180°C.
In a large stand mixer, mix the eggs and caster sugar together until light and fluffy, it will leave a trail when lifted.
Add the orange zest.
Sift the flour and baking powder into the mix and fold through.
Next add the cranberries, apricots and almonds and mix to combine.
Flour a clean surface and flour your hands. Make 2 loaves from the mixture.
Bake for 25 to 30 minutes then remove from the oven and leave to cool and harden a little.
Chop into diagonal slices and place back on a baking sheet.
Return to the oven for 10 minutes and then turn slices over and bake for 5 more minutes.
Cool and serve.
Biscotti is very easy to make and very versatile too. Swap the almonds for pistachio nuts and change up the fruits to your favorites.
