Pasta Carbonara

It was my beautiful daughter’s birthday yesterday and as always we had a family dinner at home. When asked what she would like, it was no surprise that she chose pasta as she loves it. πŸ˜‚

Quick and easy and not a jar in sight!

600g fresh pasta (store bought or homemade both work beautifully and it depends how much time you have)
4 garlic cloves, finely chopped
6 eggs, plus 2 yolks
100g parmesan cheese, grated
250ml thickened cream
500g pancetta or bacon, chopped
Black pepper

Method
Place a large pot of water on medium heat and bring to the boil. Add a little salt.Cook as per packet instructions until the pasta is al dente with a little bite to it.
Fry the bacon/pancetta in a little olive oil until cooked and crispy. Drain on kitchen paper.
Whisk the eggs and egg yolks in a large bowl and add the parmesan and cream. Stir to combine.
Drain the pasta and return to the pan. Add the bacon and egg/cream/parmesan mix.
Stir to combine and fully coat the pasta.
Serve with extra parmesan and ground black pepper.
