250g pkt biscuits, crushed
150g melted,unsalted butter
500g cream cheese, room temperature.
3 tbsps powdered gelatine
2 tbsps boiling water
2/3 cup caster sugar
3 tsps vanilla extract
2 medium mangoes, chopped
5 passion fruit, pulp removed
300ml thickened cream, whipped
Line the base of a 20cm springform tin with wax paper.
Chop the mangoes and juice the passion fruits. Set aside.
Mix the crushed biscuits and melted butter together and press in to the bottom of your spring form tin.
Place in the fridge .
Next sprinkle the gelatine over the boiling water and stir well until dissolved.
Beat together the sugar, cream cheese and vanilla extract until well combined. Add the gelatine and mix on high to thoroughly mix it it.
Fold through the whipped cream a little at a time.
Pour over the biscuit base, cover with cling wrap and leave to set overnight.
Decorate using the mangoes and passion fruit pulp on top.
