This is a no fuss, simple dinner that is great when you are time poor and can be made ahead of time and kept in the fridge. Change it up using different fish and add Dill to the sauce instead of Parsley.
Feeds 6 to 8.
700g fresh marinara mix (seafood mix)
70g plain flour
50g salted butter + spare for top of pie
750ml to 1L milk
1/4 cup fresh parsley, chopped
Salt and pepper
150g parmesan cheese, grated
150g tasty cheddar cheese, grated
15 fresh raw tiger prawns (optional)
Preheat oven to 180°C.
Boil and mash the potatoes with butter and milk, add half the cheeses. season with salt and black pepper
Melt the butter on medium heat in a large saucepan and add the flour. Mix together with a whisk on the heat and start to add the milk, continuously stirring as you add the milk. Continue until the sauce has thickened, you may not need all the milk. Cook for 5 minutes on low heat until gently boiling.
Remove from the heat and stir in the fresh parsley. Season to taste.
Add the marinara mix to a heatproof baking dish, pour over the sauce and mix thoroughly until all the seafood is coated. Set aside and wait for it to cool.
Once cold spoon the mashed potato over the top and add the grated cheeses and a few knobs of butter.
Decorate the top with 12 to 15 raw whole tiger prawns (optional)
Bake for 45 minutes or until a knife poked into the centre comes out hot and the cheese is melted and decorative prawns are cooked.
Serve with fresh steamed vegetables or a crisp fresh salad.
