4 Hoki ( or any thick white fish)
8 slices prosciutto
4 tablespoons smoked chipotle and tomato chutney
(any choice of your fav chutney will be fine)
Olive oil spray
Preheat oven to 220°C
Line a baking tray with foil or wax paper.
Dry the fish with paper towel.
Add a tablespoon of chutney on top of the fish and spread it out to cover the whole surface.
Wrap two pieces of prosciutto around it and place on the baking tray.
Once all four are wrapped, spray a little olive oil spray on top and bake for 20 minutes until the fish is just cooked and the prosciutto is crispy.
Serve with boiled or mashed potatoes and steamed green vegetables.
Quick and easy mid week dinner. To change it up simply change the chutney flavour!
