Cheese Straws

In my house these are a winner every time. Double the recipe as they are going to go fast!

1/2 cup softened butter
2 cups sharp cheese, grated (I often mix cheddar and parmesan)
1 1/4 cups plain flour
1/2 tsp salt
1/4 tsp cayenne or paprika


Preheat the oven to 180°

In a stand mixer or using a hand mixer beat the butter until light and fluffy.
Add the cheese and mix to combine.
Combine the flour, salt and cayenne or paprika and add to the mix. Combine until a ball of dough forms.
On a lightly floured surface roll approx 15 x 6 inch rectangle shape and cut into 6 inch straws. You should get 30.
Place on a tray lined with baking paper and bake for 15 to 20 minutes until golden brown.
Place on a rack to cool.

This is a very away recipe that can be changed to suit your mood. Change the cheese, add crispy bacon bits or chives, it really does adapt to what you fancy. Enjoy.
