275g self raising flour
100ml vegetable oil
200g caster sugar
1 teaspoon baking powder
1 lemon, zest
1 lemon, juice
150g icing sugar, sifted
Juice half a lemon
Preheat the oven to 200°C
Line a loaf tin with baking paper
Mix together the flour, sugar, baking powder and lemon zest and stir well to combine.
Mix together the lemon juice, vegetable oil and 170ml water.
Add the wet to the dry mixture and stir until just combined.
Pour into the prepared loaf tin and bake for 30 to 40 minutes in the middle of the oven.
Remove and leave to cool.
To make the icing mix the icing sugar with lemon juice a little at a time, you may not use it all, you just want it thick enough to pour on to the top of the cake so it sticks and doesn’t run off.
Garnish with lemon zest.
