2.5 cups self raising flour
1 cup light brown sugar and mix well.
2 teaspoons baking powder
2 tablespoons cocoa
2 x 400ml coconut milk
400g 70%dark chocolate ( check packet to ensure no animal products)
Coconut flakes to decorateMethod
Preheat oven to 200°C.
Line cake tin with baking paper.
In a large bowl add the flour, cocoa, baking powder, sugar.
In the microwave at 30 second burst melt 200g dark chocolate and 300g coconut milk.
Stir to combine
Add wet ingredients to dry and mix until just combined.
Pour into cake tin.
Bake for 50 to 60 minutes until skewer comes out clean.
Remove from the oven and leave to cool.
Melt the remaining chocolate and Coconut milk, mix to combine then leave in fridge for an hour to thicken then pour onto the cake and decorate with coconut flakes.
Slice and serve.
