Ingredients
200g dark chocolate
125g unsalted butter
3 large eggs, lightly beaten
1.5 cups (335g) caster sugar
3/4 cup (115g) plain flour
1/4 cup (30g) cocoa powder
2 teaspoons vanilla extract
Pinch salt
Cookie Dough
2 cups plain flour (250g)
1 cup brown sugar (220g)
1 cup softened butter (230g)
200g choc chips
1 teaspoon vanilla extract
1 teaspoon salt
2 teaspoons milk
Method
Preheat the oven too 180°C and line the brownie tray with wax paper.
Melt the chocolate and butter together in a double broiler or the microwave in 30 second bursts.
Once melted cool a little and sift all the dry ingredients together into a bowl.
Add the eggs into the cooled chocolate mixture, then stir in the sifted dry ingredients. Stir until just combined. Add the choc chips.
Bake for 30 mins, then remove from the oven and cool completely in the brownie tray.
To make the cookie dough, whisk the butter and sugar together until pale and creamy.
Add the flour, salt, vanilla extract and mix to combine.
Add the milk mix again and finally the choc chips.
Press the dough on top of the cooled brownie and flatten. Place in the fridge to set for a few hours .
