Egg Bacon and Potato Salad

10 rashes back bacon, grilled and drained of fat
1kg potatoes, cut into bite size pieces and boiled, cooled
10 eggs, hard boiled
1 clove garlic, grated
5 pickled the ruins, chopped small
2 heaped dessert spoons mayonnaise
3 heaped dessert spoons full fat greek yoghurt
Juice and zest 1 lemon
4 tsp dried oregano
Splash milk if neededMethod
Add the cooked and drained potato to a large bowl. Chop up the hard boiled eggs, bacon and gherkins into bite size pieces.
In another bowl, mix together the mayonnaise, greek yoghurt, garlic, oregano, salt and pepper, lemon juice, zest and whisk until combined. Taste and re season if needed. If you like a sunnier dressing, add some milk until you get the consistency you like.
Pour the dressing over the eggs,bacon,potatoes and gherkins and mix well until everything is covered.
Cover and leave in the fridge for at least an hour.
Serve on its own or with a green salad and your choice of protein.
