Lemon, Lime and Prawn Fried Rice

Feeds 4This is a little unusual, but very light and tasty, can be eaten hot or cold.. I love it ❤Ingredients
500g cooked basmati rice
1 bunch coriander finely chopped
8 spring onions chopped
250g cooked prawns, tails on (looks pretty)
4 eggs, lightly whisked
Zest 1 lemon and juice
Zest 1 lime and juice
3 tsps light soy sauce
Coconut oilMethod
Add 3 tsps coconut oil to a frying pan and cook on medium.
Add the chopped coriander and stir fry to.mix.
Next add the lemon and lime zest and juice and the light soy sauce.
Stir fry for a minute or so.
Add the prawns and toss through the rice, try tossing it together lifting the pan off the heat and quickly moving the pan forward and back if you are brave enough, if not stir with a fork to avoid clumps heavy rice.
Push the whole mixture to the side of the fry pan and add the whisked eggs, cook until scrambled using chopsticks and then mix through the rice.
Serve with extra prawns and lime wedges.If you are vegan you can use tofu instead of prawns and leave out the eggs.Delicious!
