I have been looking at some vegetarian recipes this week and have some really good recipes by Joe Wicks that are tasty, quick healthy and not expensive for ingredients. Let me know if you try any, I have loved them all and I am a confirmed carnivore!
60g natural greek yoghurr6
1/2 tsp baking powder
1 teaspoon brown sugar
Salt and pepper to taste
1 tablespoon chilli sauce
1 teaspoons olive oil
Preheat oven to 200°C
Mix together the greek yoghurt, polenta, 1 egg, baking powder, nutmeg, brown sugar and paprika.Add salt and pepper.
Pour the mix into a non stick frying pan on medium heat and cook for a minute or so.
Transfer to the oven and bake for 6 to 8 minutes or until the top rises a little. Once cooked it will have a bounce when pushed in, alternatively, use a skewer until it comes out clean.
Whilst it is in the oven, fry your eggs until the whites are cooked and the yolks are soft and runny.
Place the cooked polenta onto a plate and top with the eggs, sliced avocado and drizzle with the chilli sauce.
