More JW…Let me know when you get bored😂Firm favourite as an alternative to my usual homemade pizza with yeasted dough.Ingredients
35g each of self raising flour and chickpea flour
65g full fat natural greek yoghurt
45ml passata
Large handful of spinach
Dried herbs
45g grated mozzarella cheeses
1/4 tsp baking powder
95g sliced mushrooms, any varieties you like
Pinch saltMethod
Heat the oven to 220°C
Mix together the flours, salt, yoghurt and baking powder to form a dough.
Place the spinach into a bowl with a tiny slash of water and microwave to wilt.
Squeeze out all the water
Lightly flour a clean work surface and roll out. It will spring back so roll it thinner than you think you need to. Not too thin or the topping won’t hold.
Fry in a dry frying pan on medium heat until browned on each side and place on a baking tray lined with baking paper.
Mix your dried herbs into the passata and spread on top of the base.
Add your toppings and finish with the mozzarella.
Bake for 8 to 10 minutes.This is great for the whole family even those who like to add meat. Just add whatever they want 😋
