4 cups plain unsalted popcorn
3/4 cup dried apricots
1/2 cup dried unsweetened cranberries
1/2 cup almonds, roughly chopped
1 cup hulled tahini
2 tablespoons honey
Line a slice tin with baking paper.
Make the popcorn as per packet instructions
Blitz the popcorn in a food processor and set aside
Bliz the apricots and cranberries to small pieces.
In a large bowl add the popcorn, apricots, cranberries. Mix the honey and tahini together, pour into the popcorn and fruit and mix well to combine and coat everything. I used my hands, and it’s messy🤣
Press into the prepared tin and place in the fridge for as long as you can, at least 4 hours.
Slice and serve.
Whilst I love the idea of this slice and it does taste delicious, I found it to be too dry and crumbly on slicing, so next time I would add more honey to make sure it sets properly and slices more easily. Great as a healthier option and easy to change up with different dried fruits.
