Double Chocolate Oreo Muffins

Ingredients
2 cups plain flour
1 cup cocoa powder
2 1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 large eggs plus 1 large egg yolk
1 cup caster sugar
1/2 cup vegetable oil
1 1/2 cups greek yoghurt
1 1/2 cup dark choc chips
1 tsp vanilla extract
2 packets oreo cookies

Method
Preheat the oven to 180°C
Line your muffin tin with 12 paper cases
In a stand mixer beat together the eggs, egg yolk and sugar until pale and thickened.
Sift the flour, cocoa, baking soda, baking powder, and salt into a large bowl.
Add the yoghurt and vegetable oil into the egg and sugar mixture, combine well and add the dry sifted ingredients. Gently fold through until the flour is just mixed in. Add the choc chips and gently fold through.
Add 1 tablespoon of the batter to each paper case and pop an oreo on top. Add the second teaspoon on top and crush another oreo over the top. Repeat until all 12 are done.
Bake for 10 minutes then reduce the temperature to 170°C and bake for another 20 minutes or until a skewer comes out clean. Leave to cool.
