1 cup self raising flour
1 cup light brown sugar
1 large carrot, grated
1 large overipe banana, mashed
1/3 cup milk
Preheat the oven to 180°C
Line the muffin tin with paper cases.
Mix the flour and sugar together in a large bowl, make a well in the centre.
Lightly whisk the egg and add the milk and mashed banana.
Pour over the flour and sugar and mix to combine.
Add the carrot and mix again.
Place into your paper cases until 3/4 full and bake for 30 minutes or until a skewer comes out clean.
I make double as they freeze very well. Great way to use up those ripe bananas and cure your sweet craving all at once.
