Black Bean Stew with Grilled Garlic Pitta

This stew is so easy and requires no skill at all. It can be made by soaking your own black beans and making your own pitta (recipe on cookeatyumtsv.com)
This is a speedy meal that will impress the whole family, including the carnivores ☺ Give it a try, change the beans for another kind if preferred.Ingredients
4 x 400g tins black beans, rinsed and drained
1 red chilli, sliced
2 tsp onion powder
1 tsp garlic powder
3 sticks celery, chopped small
3 large carrots, chopped small
1 large red onion, chopped small
1 bunch spring onions (6 to 8), sliced
2 large limes, zest and juice
2 garlic cloves, minced
2 tsp ground smoked paprika
2 tsp ground cumin
1 litre vegetable stock1 avocado, diced
1 packet of fried shallots (available premade in asian supermarkets or some mainstream ones.
Garlic infused olive oil
1 packet flatbread (4 in a pack)Method
Place all the top listed ingredients into your slow cooker adding the stock last. Stir to combine and cook on high for 4 hours or low for 8 hours.
Place one flatbread at a time onto a heated grill pan and brush over the garlic infused oil, salt and pepper.
Turn over and repeat on the other side. Cook on both sides until grill marks appear and it has heated through. Chop into strips.Serve the stew in a deep bowl with chopped avocado on top finish with a spoonful of crispy shallots.
