Broccolini, Asparagus, Tomato and Goats Cheese Frittata

Great way to clear out your fridge at the end of the week.Ingredients
2 bunches broccolini, trimmed and chopped
8 Asparagus spears, chopped
12 vine cherry tomatoes
6 large eggs
3 egg whites
Goats Cheese (as much as you like)
Salt and pepperMethod
Preheat oven to 180°C
Spray your baking tin with olive oil spray
Whisk the eggs and egg whites together and season with salt and pepper.
Add the asparagus and broccolini and stir.
Pour into the prepared tin
Add the cherry tomatoes and goats cheese on top and bake until cooked through 40 to 50 minutes oven depending.
Remove from the oven and leave to cool.
Slice into 6.
