Makes 12 jumbo or 24 regular size muffins
4 large eggs
1 cup brown sugar
1 cup vegetable oil
2 teaspoons vanilla extract
6 overripe bananas
4 tablespoons greek yoghurt
300g plain flour
2 teaspoons bicarbonate of soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
260g white chocolate chips
Preheat oven to 160°C fan forced.
Line muffin tin with jumbo cases
In a stand mixer whisk the eggs and sugar until pale and thickened, about 3 minutes.
Add the vegetable oil and mix again, then add the vanilla extract and mashed bananas, mix well to combine. Add the chocolate chips.
Divide into the prepared muffins cases and bake for 35 to 40 minutes for jumbo or 25 to 30 for regular size. Bake until a skewer comes out clean.
Place onto a cooling wrack, enjoy 😉
Place sieve over the mixer bowl and sift in the flour, salt, bicarbonate of soda, ground cinnamon.
Fold in using a rubber spatula until just combined, seeing a little flour is fine don’t over mix or your muffins will be tough and chewy.
