Choc Chip Shortbread

250g butter, room temperature
2 cups plain flour
1/2 cup caster sugar
200g milk chocolate chips

Preheat oven to 160°C fan forced
Line baking tray with wax paper.

In a stand mixer add the butter and sugar and mix for 2 minutes until light in colour.
Reduce speed and add the flour a cup at a time then add the choc chips and mix until just combined.
Lightly flour the work surface and rolling pin, roll out and cut with chosen cookie cutter.
Place on to the prepared tray and place the tray in the fridge for an hour to allow the dough to rest.
Bake for 25 minutes until slightly coloured. Place on a cooling rack.
