Flourless Chocolate Cake

1 heaped teaspoin instant coffee
1/4 cup boiling water
200g unsalted butter
200g 70% dark chocolate, chopped
2 cups almond meal
3 tablespoons cocoa powder plus extra for dusting
4 large eggs, separated
1 cup caster sugar

Preheat the oven to 180°C, line a 22cm springform tin with wax paper.

Add the boiling water to the coffee, stir and set aside to cool a little.
In a large saucepan add the chocolate, butter, coffee mixture and cocoa powder and gently heat together until melted. Stir well and remove from the heat into a bowl to cool a little.
Mix the egg yolks and sugar together for at least 5 minutes until they thicken and become pale and fluffy, this is important be patient 😊
Whisk the eggs whites to form soft peaks.
Add the melted chocolate to the egg and sugar mixture and add the almond meal. Stir well to combine.
Now using a metal spoon, gently fold in the egg whites until all combined and pour into the prepared tin.
Bake for 50 to 60 minutes oven depending or until a skewer comes out clean. Cool completely then dust with more cocoa powder and serve with whipped cream or just on its own. Delicious. #chocolatecake #cake #food #coffeetime #flourless #chocolate #cakedecorating
