Pistachio & Cranberry Fudge

500g white chocolate
1 x 395g can sweetened condensed milk
150g dried cranberries
95g pistachio nuts, chopped

Line your tin with wax paper for easy removal once set.

In a microwave proof bowl add the white chocolate and condensed milk and melt in 40 sec bursts, stir after each one until the chocolate has melted and the mixture is smooth and silky.
Add the cranberries and pistachio’s and stir well.
Pour into the prepared tin and smooth to the edges. Place into the fridge to set for a few hour. Chop into squares and serve.
